Led by executive head chef Claudio Vargas, our kitchen brings together matured meats, fresh Mediterranean fish and paella made the way it should be, alongside dishes drawing influence from further afield. Almost everything begins with local produce, so what reaches your table reflects the island it came from.
The Setting
Beachfront in Palmanova
Siso Beach sits directly on the sand at Son Matias, with uninterrupted views across the bay and the kind of light that does most of the work for us. The space is open, relaxed and designed around the water, whether you’re in for a long lunch under the sun, sundowners on the terrace, or dinner once the lanterns come on. It fills up quickly in season, particularly at weekends, and booking ahead is the easiest way to secure your table.
